quiche lorraine

Quiche is probably my favorite breakfast food. it's perfect for Easter, brunches, or just a Sunday morning. This is my favorite recipe for a very basic and delicious quiche lorraine.
what you need:
  • 1 pie crust (you can make it yourself or use a premade one)
  • 1 cup shredded Swiss cheese (Gruyere is preferable, but much more expensive)
  • 1 half of a large onion
  • 9 or 10 strips of bacon, cooked crisply
  • 4 large eggs
  • 1 cup half and half
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg (optional)
Step 1:
preheat the oven to 350 (F)
chop the bacon and onion. Not too finely, and you don't want to have any really big pieces.
Step 2:
fill the pie crust with the cheese, onion, and bacon. Try to disperse the ingredients evenly- don't let all the bacon sit in one side, don't let all of the cheese sit on top, etc.

Step 3:
beat the eggs in a small container.
Step 4:
beat in half & half, salt, sugar, and nutmeg.
Step 5:
pour this mixture evenly over the ingredients already in the pie crust.
Step 6:
put the whole pie on a cookie sheet in the oven. Bake for 45 minutes, until you can't put a butter knife in the center without breaking the surface. Take it out when the crust looks brown and the filling doesn't jiggle.

let it sit for a few minutes before serving. it's great hot or room temperature. enjoy! :)
